Serial data to XML translation

I am getting some serial data from an old computer on my COM port. The data received is data from a scoreboard for sport events. I want to be to decode and convert to a local XML file. The XML file must update itself as the data is changing on the COM port.
TeamViewer access to the computer that receives the data can be provided to sniff on the COM port.
