modifications to WooCommerce and Wordpress

We have a website that sells a service and we need to capture data and store it, and make it easier for us to view the data. the Service will be event based where anywhere from 10 - 100 people will sign up their child for the event.
we need to capture the parent data (CUSTOMER) and Child Information
a parent will purchase a service for their child who is a sports player
we need information on the player based on certain criteria such as level of play, age, height, weight, etc
the parent might sign up their playe for multiple events through the year, thus we would not want them to complete the player form each time. We need to expand the user info to contact all this information.
