WordPress Server Backup Removal & Local Copy

I'm looking for a professional with extensive WordPress and server management experience. I want to test my website’s resilience by making critical changes that only I can fix.
The job involves:
- Safely removing all backups from my server while ensuring a local copy is created.
- Ensuring that only I can restore it if needed.
As I have full server access (SSH/FTP), the task will need to be handled with utmost care to prevent unnecessary downtime or data loss.
I prefer somebody who is:
- Highly skilled in server management and WordPress.
- Experienced in creating local copies of server data.
- Trustworthy and capable of implementing strict access control measures.
