Woocommerce custom theme amends

This work comes in 2 parts.
PART1
My client has a Woocommerce site that has had some custom products functionality built in and uses shortcodes to display this functionality in certain pages.
I need to use a new theme (already installed) and get these shortcodes working in new theme from the current theme.
PART2
Once the new theme has been designed (not part of project) I will need the site design/theme moving onto the live domain....but only the theme/design...not the product, order or customer data. This must be kept intact on the live site.
All initial work will be completed on a staging site.
