WooCommerce - Wordpress Wizard Wanted to Hunt & Destroy Glitch

I am having a recurring issue and have not had any resolution at all here. It is a weird issue.
My site seemingly resets itself, I lose custom CSS in the theme (Astra) and the shipping options disappear on checkout and it stops asking for shipping, also the stock status seems to get toggled. Which breaks my composite/bundled product setup.
This happens to be around midnight or 1 am (MST) when these things happen and it messes up my site. I have worked on turning off the caching, adding rules for Varnish, monitoring the Crons, I have new relic, I have done everything short of a rebuild I believe. The crons running are the woocommerce admin daily, then rankmath clean_trashed and rankmath internal links, not sure if these are the culprits.
This has only happened since moving to Cloudways hosting from A2 which seems like it should be awesome, but these errors are pretty big and costly. The site has been live since 2018.
