WooCommerce Payment & Shipping Setup

I'm in need of a WooCommerce specialist to configure payment options on my online store.
I need help with a woocomerce store. We have in 2023 implemented a tax setting for 0% tax and 21% tax we sell solar stuff and our government decided to do 0% tax on solar related products. Also we have products with 21% tax. And they can buy both different products at once with two different tax rates, after they agree withconditions. This is all working but now we add new products and we needd to set the right tax for each product
PS, everything is working fine but i need to know how it is setup and how it works, The guy who created this is not here anymore.
