Making ElasticPress work flawless in WordPress with WooCommerce

We have these websites from a customer:

Then, on the same server, we have installed ElsaticSearch v7.10.
The first website works ok. The other two don't have filters working (although they did worked in the past and although websites are basically copies of each others).
We need help with this from someone expert on this!
