Customize code to personalize checkout Woocommede checkout process. -- 2

The website is from our tour company, so our clients/visitors will book trips on it. It´s WordPress and Woocommerce powered and we manage the programs (AKA tours or products) with the plugin Wootours.
It's important to know that it is a multilingual website. We manage the translations with WPLM. The coding solution that will be developed and implemented needs to be fully compatible with it.
We have different kinds of tours, so clients need to provide us with different information to book a trip. Depending on the tour that they will book, we may need more or less information about the persons who will participate.

As the website is set up now, we can not customize which information we need from the clients. It´s standard for all the products (AKA tour or programs), although we manage to add some fields (using a plugin that for the custom code should not considered, so once you considered pertinent it need to be deactivate), it does full fill what we are pursuing:
1. We requiere that depending on which category has the program (AKA tour or product) is the information of the contact and passengers we will request during the checkout process (step 1 and step 2).
- Categories are listed in this document from the link above as well the fields required per category.
2. The custom coding for point number one also needs to consider a solution for how we (the company that will organize the tour/program/product) will receive the information that the client will fill during the checkout process
- Notice that: with the current setup of the website, we are receiving all the information in the order-email and when we use the google formular, we are getting each formular in a row on a google sheet).
3. We need to improve the design layout of “step 3” (review order details - how the pages are looking) and the design layout of the resume order detail (the page that shows after correctly finalizing the checkout - how the pages are looking).
- You will be provided with the required layout as a JPEG image once we have some progress on the coding, so we can work based on what you already have, to adapt it to what we need.
