Custom E-commerce Site for Indian Market

I want to take my product line online with a full-featured e-commerce site tailored for the Indian market. I have not locked myself into a platform yet—Shopify, WooCommerce, Magento, or any other solid alternative is fine as long as the final store is fast, secure, and easy for me to manage.

The catalogue will launch modestly, but the codebase and hosting must be ready for growth. I need Indian payment gateways (UPI, Paytm, Razorpay, net-banking, credit/debit cards), automated GST and shipping calculations, responsive design for mobile shoppers, and an admin area where I can update products, prices, and promotions without touching code. Please include basic on-page SEO setup and the usual must-haves like SSL, order tracking, and email notifications.
