Shopify - Organize Products and Collections -- 2

We need assistance with getting our products organized into collections. We need someone that is familiar with working in Shopify and has experience organizing and creating automated collections.

We would like to have the shop cleaned up with only one collection used at first, and use a faster, modern, user friendly template.
