Natural Yield Website Woo Commerce build

Natural Yield (www.naturalyield.com.au) grow and sell Microgreens.
We had a very good shop created with Shopify, but they decided to deactivate it (no detailed explanation given).
The shop supported normal product front, custom pages, navigation, products, product collection, inventory tracking (standard Shopify features). We also had support for:
- Point of Sale (POS) through a Stripe Reader.
- Customer Product/Order Subscriptions
We would like to host the new store on our own server (Amazon EC2 in the Sydney region) using Woo Commerce. We have the website and product content (logos, product photos, product descriptions, page photos, page text content.
We therefore are looking for quotes on providing the following:
- Creating the store in our AWS EC2 instance
- Customising the theme to support our style of business (Microgreens) and existing colors (found in the logo)
- Set up the payment support
- Set up the POS support (using Stripe Reader)
- Apple iPad version of the store (for POS terminal) tested
- Set up product / order subscription support
- Work through any fixes as we do test customer transactions.
If any of the above features are not possible or you have alternative suggestions you can suggest them. However, it is important to us that we host our own instance so we are not in a situation which we had with Shopify, where they had the ability to deactivate our site.
We will create the AWS EC2 instance for you based on any specific guidance you need. We will then provide you the credentials to log in and do your work.
