Help Creating a Communication Log

I need an admin superstar to help me. I have a disability and have significant problems when it comes to memory and communication. What I am seeking help with is the creation of a document file system that I can provide lawyers with that makes it easy for them to find the information we need. I am currently going through a divorce, so this is not a business document but needs to be correct and look professional.
I currently have a word document that I need to be expanded and continued working on. The main areas of help I need are:
1. Creating an overview of long emails so that we can know what is contained in those emails
2. Creating a mini overview for the main log and assigning # tags to entry so we can easily find different records as needed
3. Transcribing Video and Audio Calls, then create an overview of long phone calls so that we can know what is contained in those calls
I can do 2 hours of work this week and then 5 hours a week until the work is completed
Please Bid for 1 hour ONLY. This will allow me to have your overview one email, transcribe one phone and make recommendations about my system or changes you would recommend.
Must have excellent English, both written and spoken, and be able to create to-the-point detailed overviews. Discretion is a must.
