Analyze application behavior when connected as a Poor Dumb User

Our company is expert in, among other things, data center migrations, and we use a specific home-grown application to assist in the delivery of these services. The application is most often run as an Administrator, but has a non-admin mode as well. We need to analyze the entire application - all the pages, all the menu options, grids and modals, when logged in as the non-admin user and identify behavior.
This can include, but not limited to, menu items present when they shouldn't be, functionality available when it shouldn't be, buttons appearing and enabled when they shouldn't be, and so on.
