Fix Call Connection Failures in App

can you help me with my app where users can make voice and video calls using WebRTC. Signaling is done with Socket.IO. We use ICE servers from Twilio, Xirsys, and a self-hosted Coturn server on DigitalOcean with TLS
The problem is that calls often fail. Signaling works, but media doesn’t. One or both users can’t see or hear each other. This happens more frequently when users are in different countries, behind strict NATs, or using VPNs.
We need a WebRTC expert to investigate and fix the root cause of these ICE negotiation failures. The goal is to make sure calls always connect, no matter the device, network, or location. This includes Android to Android, iOS to iOS, and Android to iOS combinations.
You must optimize our Coturn setup, improve ICE server usage, and optionally implement automatic fallback logic if a connection fails. You should also explain the solution so we can maintain it.
Tech stack: Ionic with Angular frontend, Node.js with Express backend, WebRTC for media, Socket.IO for signaling, and ICE servers from Coturn, Twilio, and Xirsys.
