Encrypt STUN traffic for WebRTC on Matrix chat app

We deployed a chat Matrix Synapse server using this playbook however we want to configure coturn to enable TLS on STUN traffic.
Task:
Enable TLS on existing server
Confirm traffic is encrypted with TLS1.2

Must understand STUN, TURN, and TLS encryption for VoIP streams.
Basically, metadata shows the username/phone number in the STUN traffic we want to encrypt to hide that.
