Email Data Parsing & API Posts

The project would involve parsing data out of several predefined email templates used for purchasing inventory. Once the data is parsed there needs to be a logic layer to format it into an API call. There also needs to be a maintainable look up table (Google Sheet) to bring in other data that won't be found in the email. The final step being an API post call into my inventory management system to add the inventory. Ideally the project will be hosted in my GCP project. Google Apps scripts makes the most sense since the emails and sheets will be in GSuite.
This can be a long term engagement as I have many automation needs. Proficiency in web scraping is also preferred.
