Schema Markup for Existing Directory Theme

I've got a business directory WordPress theme that I just discovered doesn't have schema markup in it, so search results in Google don't currently include Rich Snippets. And I'm mostly interested in configuring that for reviews on the site so that when each listing is shown in the search results, it shows the aggregate star rating of all the reviews, the total number of reviews, and the price-range, if given by the listing owner.
There are various plugins that will let me integrate an entirely new review system into a website, but I've already got one built into the theme that just needs improving.
I'm using the Schema Pro plugin currently, but I only see a pre-made schema for 'Review', as in a single review. This is helpful for at least adding the star rating to the listing (assuming Google decides to eventually display it after the next crawl), but it's not going to show the number of reviews or the price range next to it, which are important.
The plugin is also helpful for other things like configuring schema details for the homepage, logo, etc. and I intend on using it to configure FAQ blocks and maybe more.
In other words, I'd like to keep that particular plugin and just augment it, but if some other plugin is more suitable, that's fine too.
There is a 'Custom Markup' option, but it's not clear to me how to use it exactly.
I also know that I could manually use a schema markup generator and go that route, but there are thousands of reviews that this would be applied to, and I have zero desire to go make a markup for every single one of them. And I wouldn't want to have to do that to every single new review that comes in the future either.
So that's where you come in! Assuming you have experience with this sort of thing, I imagine this would be pretty straightforward, but I don't, and I've got enough on my plate as it is. So I'd rather just pay someone who does have experience in this area, assuming it's for a reasonable amount.
