build me an excel sheet

We currently have multiple vehicles which go through tolls. the company ezpass is not commercial freindly and doesnt allow us to label the van number and to see what day of the week is was used. I want to create a excel sheet that allows us to list vehicle numbers and their transponders/tags. I want to then upload excel sheet of transactions which will then generate a report labeling vehicles, days of the week, etc...
