Custom PDF Data Extraction Program/Software

I'm in need of a software or program that can extract any type of data from PDFs and input that data into an Excel file. The PDF files are invoices.
-I will have a local folder on my computer with more than 1000 PDF Invoices, and once I run this java program, I want it to go through the PDFs in that folder, one by one, and add the data I want to one master excel file. The program needs to be able to go through a lot of PDFs without breaking. There may also be some PDFs of different formats. It also need to tell me which files were not added to the excel sheets.
- Language: Java is preferred.
- Data Extraction: Whether it's text, numbers, statistics, images, or graphics, I need the program to handle it all as per my input.
- Organization: The program should be able to place the data in Excel based on its order in the document, maintaining the logical flow of the original source.
- Timeline: Flexible
