Open Source Media Server Expert

I'm building a video conference app and looking for consultation on which open source media server is the best. Things I'd like to consider are:
- video quality
- latency
- scaleability (webinar)
- how easy is it to fork and make custom features
- how easy is it to compile and launch apps
- availability of Android and iOS app
- Cost! associated with various servers and how easy it is to calculate
- Analytics for monitoring traffic and performance

I'd like to talk to an expert for two hours or so to discuss the pros and cons of each with with various server setups. Here is the shortlist of media servers I'm considering. Are there better ones?
