TYPO3 backup, stage environment and changes on live personalized website

Let me explain our project, and hopefully, you can tell me if this is something you have experience with.
Our website is based on Typo3 and our domain is based on JWEILAND. We do all the content internally including SEO, but the technical side of the site was managed by an agency (we don´t work with them anymore).
They have personalized a few of the modulus we have on Typo3 and we don´t have any documentation or contact with the agency anymore. We have a project starting on the first of July and we need someone to be able to change things on the site after creating a backup and a stage environment and then, do the changes we have in mind.
For step one (ASAP):
Create a backup of the site
Create a stage-environment
For step two (1st of July):
Change in footer EECA HQ address to Almaty.
Rename HRS Russia page to HRS EECA page (rename also the web link address and tab name)
Leave only a copy of HRS Russia page in Russian (non linkable from other parts) to be accessible as before by Russian IP and by direct link www.hrs.ru
take out all Russian and Belarus Offices from all pages except the copied HRS Russia in Russian from above point. In New HRS EECA both in English and Russian should be the same as others without Russia.
Change Dusseldorf address street name in the footer to “Johannstr. 37”
Delete all vacancies for Russian & Belarus offices from vacancies page (will the countries be deleted automatically after removing from the contact list in the vacancy form?)
We are not necessarily looking for the same person to work on both steps, but we need to start with step one ASAP (and we can provide more clarification on step two afterward).
We can provide admin access to the site and support as much as possible, so please answer with:
What experience do you have with personalized code in Typo3?
What is your estimated price and time for the project
What experience do you have with both steps and all the points described?
What is your agenda look like for the next couple of months?
We might need some other changes soon if we get to work well together.
