Precise data entry retyping Open

I have a collection of PDF files and scanned images that need to be faithfully re-typed into fresh Word and Excel documents. In Word, many pages contain well-structured tables and bullet lists that must look identical to the originals; plain text alone will not be enough. In Excel, each sheet will hold mixed data—numbers alongside descriptive text—so careful cell placement and alignment are essential. Fast, accurate typing is key. I want every character verified, every table edge aligned, and every column balanced so the finished files require no additional cleanup. Three days is my preferred window, yet I can adjust if that helps maintain 100 % accuracy.
