Model for chatboot with option to put own data and change it in future by admin

I need some consultancy/ help from some experience data scientist.
I want to have chatboot something like chatgtp(or something similar, I dont want to pay monthly payment) but for training phase I want to put the information to the model by writing with this model or uploading the text file information ( for examples history of our company ). Model needs to remember this and once training is finished and later on is talking with person this knowladge cannot be changed.
however me as admin I would like to have option to add (Or maybe change) something in future.
Is it possible? I need someone who will explain me option and develop with me this together.
