Windows Server Traffic Routing via VPN

I'm looking for someone to configure a route on my Windows server. The aim is to channel specific traffic to a pair of IP addresses through the existing site-to-site VPN, rather than via the internet.
Key Requirements:
- A route set up on the Windows Server to direct particular traffic to a pair of IP addresses.
- This routing should be done through an existing site-to-site VPN, which is established through OPNSense.
- The designated traffic involves specific IP addresses/subnets.
Optional:
- Basic logging and monitoring of the routed traffic. It doesn't need to be extensive, but I do want to ensure that the traffic is successfully being sent through the VPN tunnel.
