Migrate PLESK to a new server on OVH

Hello,
I have a VPS with a Plesk installation on a VPS, that is too slow for us.
I have bought a dedicated server and installed new Plesk already.
Both servers are on OVH.
I think we should use Failover IP to quickly move 50 domains to a new server.
We have to do it quickly, during the night ours in Poland.
We should restore the entire Plesk backup and perhaps quickly restore the database with the orders.
There are e-commerce shops on the plesk, and we cannot lose any new placed order.
I can help with DNS / glue domain changes, but you have to instruct me what to do.
