ERC20 token, Uniswap V3, Add entry to map variable inside transfer function without sending the tokens.

I'm looking for someone who is able to have a 5 minutes chat with me and tell me how I can write a contract variable inside a transfer function of an ERC20 token without actually making the transfer.
Example:
If wallet address ends with number 5, I want to store that wallet address in a map variable and at the same time I don't want to allow it to make the swap.
The token will be paired with ETH on Uniswap V3.
