Write to Google Sheet from Slack when a specific emoji is used on message

When I give a specific emoji to a message in slack, I want that text and a couple other properties written to a google sheet row. Every time that emoji is used I want it to add a row to the spreadsheet. I imagine for someone who knows what they are doing this is easy.

The goal of this is to track questions that come in for my team. Example, a team member answer a support question and assign an emoji to the original question and it's recorded in a google doc. That way we can track question answering with very little effort.

Properties that I want written to google sheet are:
Text of the message
Who assigned the emoji
What emoji was used
Datetime the emoji was assigned.(very flexible on datetime format in the doc)
(if possible) person who wrote the original message

Deliverables:
Step by step how to setup this up. I can't give anyone from outside access to our slack. I want to implement this on our system and perhaps a few other places so I need to know how to do this.

Completed.JPS would be the message after someone answers the questions and added the completed emoji. (it doesn't have to be the completed emoji. I'm using that as an example)
