Some modifications in a shopify system

For our new shopify project we need some modifications:

-All Pages: Top Menue left nexto to logo - if possible i would like to delete it - so logo only on the left hand side
-Frontpage: Rename "New" into "Neu"
-All Pages: Change Preview Product photos to "square" size
-All Pages: Change Preview Product photos - NO mouseover (mousover - no photo change)
-Kontakt: Top Photo should be changed but I cannot find what I have to do to change the top photo on every page
-Product List Page: no top photo
