develop a function for my shopify store

I am moving from etsy to shopify and have sadly noticed that shopify will not allow me to listing the item quantity as "1" regardless of how many variants are available.
I will explain further. I sell custom hand made jewelry and because I only have limited materials I am usually only able to make a few of each of the designs listed in my shop. I would like for my customer to be able to choose what size they would like for me to make their jewelry in Inches and each size variant comes with a small increase in price. As of now I allow them to pick from 35 different size options. However shopify is making me give each size an available inventory quantity which would subsequently mean I would have 35 of each design available for purchase , which I d not. I need some sort of coding that would allow each of my designs to have a quantity of "1" and still allow for customers to pick which size they want and still allow for increase in size to increase the cost of the item.
