Shopify store, remove the default choices for buyers (force them to choose)

I have a dropshopping shopify store, I use Debutify theme and not willing to change the theme.
I need to remove the default choice of my product variants. For example, if the buyer didn't select any colour it auto selects the first colour by default, and same with the Size. I want the buyer to be forced to select both.
Also we have a space for the buyer to write a word to be printed on the name label. This space I want it to not be possible to be left empty. If the buyer leaves it empty, he is forced to write something.
