Shopify - Theme / Improvement

Our new shopify store needs some love. We have very a very wide range of stock, but low quantities. This makes shopping a bit challenging. We would like to have a collection/view of all of a gender and size available. For example, I would like to easily see all Ladies Medium. Or all Mens Large, or Ladies Size 8. And overall we are pretty flexible to the theme as we are using the "simple" theme.
