Need quick assistance on 2 Shopify issues

I am in need of quick assistance with two issues on my Shopify store. Specifically, I require help with immediately with 2 small items. One, in Shopify when you select a product variant, it does not update the quantity for that item. The name, image and price adjust fine. I've spent hours on the code and I did fix one issue where it was always saying for variants: Undefined in stock. Now it shows the quantity fine, but if you change the variant, it keeps the same quantity. If you refresh the page, it will show the correct quantity. I believe one line is missing in my selectcallback section in my product.liquid file. My second issue is that images for all my products work fine on a computer but for mobile you can only see the main image for that product. I need to be able to scroll through the images.
