Add Insurance option to shopify store

I have a Shopify store with over 3,000 products. I want to be able to add the option to sell shipping insurance to our customers. I want the price of the insurance to change based on the price of the item. I would like the insurance to be automatically loaded to the shopping cart with each order, with the option for the customer to remove it. But I wanted it added as a defualt.
