Process automation for a Product initiative from start to end

We have 7 product categories. Say, ABCDEFG. All have different layer of processes with fixed due dates. The categories have different criteria to choose a path of process and their own timing.
What we need is, to create the approval and task assignments for each involved roles/employees. They have to complete the jobs as per the predefined time, attaching appropriate documents.
A visualized dashboard of the status of the flow with colored representation according to on-time or overdue deliverables. A complete timeline of the process as well to be visualized.
An employee performance data to evaluate the involved employees in the process.
