Create Sharpoint list from email

We would like to have a SharePoint list connected to an email account. The email account recieves signed contracts from Docusign and Adobe Sign. Specifically, when a customer signs a quote from either Docusign or Adobe Sign data is extracted from the Subject line (Name, Job#), date and origin, and automatically entered into the list. The list, which includes 8 columns of related data that is hand entered, must alert the team members via Teams when list data updates.
