Build an inventory app check in check out features

Hi, I would like to build an inventory app, which is something like a equipment database in office, we can add new item (in this app and also in other app which can lookup to this app), update item info and status, and there is a drop down button on each item which is to select quantity to borrow, once all quantity of item is confirm, there is a button to collect all data to a selected project and generate a new excel in sharepoint certain folder. This new generated excel is like a checklist file, this excel may be in the same app, which showing the borrowed item, and will stock checked by date & user. Also, the item could be returned to database, or consumed or loss or broken or etc.

If possible I would like to use sharepoint list instead of dataverse due to I do not have premium power automate. Thank you.
