Build a Sharepoint Online Project Management Site for a Poc

We're doing a PoC for a product that we'd like to integrate into our IT environment and would like to manage the PoC Project via SharePoint Online Project Management site that we can use to communicate with the pilot & champions that are involved in the project and other stake holder i.e. sponsor and other executives.
The site should capture the PoC Checklist amongst other tasks, milestones and phases of the project as they're being completed, thus showing their current status amongst other details. Information will be provided about the phases, milestones, tasks, dates and deadline, etc.
The site will later be used as a template for other PoC and project management sites.
Please avoid biding for this project if you're just starting or have no experience in such complex projects. It's a minor project but complex because it involves workflows, forms, lists, etc.
The project must be completed within 1-3 days.
