Optimize seo-tuned website built on Next.JS

We are currently rewriting our website using Next.JS. Our top priority is to have lightning fast website with fully optimized SEO signals (core web vitals, page speed etc)
On a given page, when all the content is loaded and server-side rendered (for SEO), the page speed suffers greatly.
I'd like to get consultancy on this matter to help speed it up. The success criteria is to load all the content server-side and have core web vitals avg above 85-90 points
