create a task from an email in Saleforce

We want to be able to work from a task list, rather than email in box. When an email comes into Gmail a task need to be created so sales person can respond, are we able link task with the email so sales peerson can respond to emails Task shoudl be named from subject of email inbox. The would apply to a gmail inbox rather than any filters/folders that sales person might have set up in Gmail.
We have quotes come into saleforce from our website and if they are over a certain amount we want a task created that wil put that task at teh top of the list so priortise it if Sales person is working down a task list, so might be a case of tweaking for a certain value and being able ot priortise that task to top of list.
