Daily Salesforce Flow for Data Anonymization

I'm seeking an experienced Salesforce developer to create a Salesforce Flow that anonymizes specific Lead and Contact fields on a daily basis.

Requirements:
- The Flow should anonymize Personal Information (e.g., name, email) and Professional Information (e.g., job title, company).
- Custom Fields and Specific custom data should not be affected, unless specified.

Trigger:
- The anonymization process should be time-based, running every day.
