Mulch bed landscaping

Mulch bed landscaping; we have a couple large mulch beds that I currently have perennials. We would like to rellandscape these areas with Evergreens and some perennials or annuals. This area faces direct west as we live on top of a bluff. It gets full sun throughout the summer. We have irrigation in these beds but don’t use it. However we can start using it if necessary.
