Odoo Implementation Expert

I'm in need of an Odoo expert to assist me in the implementation phase of the Odoo system. The freelancer should mainly focus on configuring workflows.
Key Tasks:
- Expertise in Odoo is required
- The main task will be to configure our sales workflows in the Odoo system
I'm looking forward to working with freelancers who have a great deal of experience in both the implementation of Odoo and configuring workflows within the system. Although the emphasis of this project is on configuring sales workflows, a broad understanding of Odoo and its applications is a must. This will ensure a comprehensive and effective setup that optimizes our operations.

We are an IT company that sells IT services as well as Managed Services products.
We are familiar with certain ERP solutions like SAP, but Odoo is still somewhat new to us. We are already doing well learning Odoo, however, we have some questions for which we would like to rely on professional support.
We are currently operating Odoo Enterprise version 17 on our own servers.
Task:
We have maintenance contracts with a monthly hour contingent.
Maintenance contract S8 includes 8 hours of our activity per month. If the contingent is not exhausted, it expires, and the customer has a new contingent of 8 hours the following month. Should the customer exceed the contingent, i.e., use more than 8 hours, the additional time should be billed on top of the maintenance contract.
The maintenance contract is a 1-year contract that is billed monthly.
We manage our customer tickets with the Project module. Each customer has their own project in which tasks are processed. The tracked time there serves as the basis for billing.
We also had an approach where the hours in the order have accumulated. However, this becomes very unclear with many contracts and over time.
