Odoo Deployment Consultant / Implementation

We have an Odoo Enterprise online license for our business. We are looking to backdate our sales orders, currently odoo does not allow for backdating. We have found the solution which is to comment out 1 single line of code. Probelm is, we are on odoo online and they require us to move to odoo.sh or self hosted to be able to edit that 1 line of code.

We are looking for someone to recommend best option of either odoo.sh or self hosted.
Also someone who can help us set up odoo.sh or self hosted.
