Connecting pdf form responses to excel

I have a client-intake form I was provided with some interactivity (text response boxes). This is in the form of pdf. I would like someone to write a script to store the data in a spreadsheet or db table. Ive heard this can be done through Python, JavaScript, or tools like Google Apps Script for Google Sheets. And we need a library or tool to extract the form data
