Food Technologist Needed for FMCG Snack (Kolkata Phuchka Kit) – Recipe Standardization & Shelf Life
**Description:**
I am building a unique FMCG product: a **Kolkata-style Phuchka Kit** that includes puris, potato mix, tamarind pulp, and flavored pani concentrate.
I already have the **base recipe and concept ready**, and I am looking for an experienced **Food Technologist / Product Developer** to help convert it into a **standardized, scalable product** suitable for commercial production.

**Scope of Work:**
1. Convert my existing recipe into a **professional formulation** (grams / % basis)
2. Create a **Standard Operating Procedure (SOP)** for consistent production
3. Suggest improvements for:
* Taste consistency
* Shelf life (target: 30–60 days)
* Stability of liquid and dry components
4. Recommend **natural preservatives (if needed)**
5. Guide on **packaging compatibility** (especially moisture control for puris)
6. Support during **pilot batch testing** (iteration-based improvement)

* Pani puri (golgappa) puris (outsourced)
* Potato masala premix (dry)
* Tamarind pulp (thick concentrate)
* Spicy pani concentrate (liquid form, to be diluted by customer)

**Requirements:**
* Background in **Food Technology / Food Science**
* Experience with **snack products / ready-to-eat kits / spice mixes / beverages**
* Understanding of **shelf life and food safety standards (FSSAI)**
* Experience in **recipe standardization for manufacturing**

* Experience with Indian street food products
* Worked with FMCG brands or contract manufacturers
* Knowledge of packaging for fragile products
