Develop New Spice Powder Line
Budget: ₹1,500 – ₹12,500 INR
I’m building a wholesale line of single-ingredient spice powders—chilli, turmeric, and coriander—with a strong focus on **consistent quality, competitive pricing, and scalability**.
We already operate in the wholesale market, so this is not a concept-only project. I need a food technologist who can help refine and standardize the product so it can **compete with established brands on colour, aroma, purity, and shelf life**, while still keeping production costs under control.
### What I need:
**1. Product Standardization**
* Define clear raw material specifications (moisture, colour value, curcumin %, volatile oil %, etc.)
* Suggest acceptable quality grades that balance cost vs performance (not premium-only—practical sourcing)
* Adulteration checks and purity benchmarks
**2. Processing & Production Flow**
* End-to-end process: cleaning → drying (if needed) → grinding → sieving → blending consistency → packing
* Grinding method recommendation (hammer mill / pulverizer / cryogenic if justified)
* Methods to retain colour, flavour, and volatile oils without unnecessary cost increase
* Basic microbial control strategy suitable for spices (steam sterilization vs alternatives)
**3. Shelf Life & Stability**
* Realistic shelf-life estimate under Indian conditions
* What actually affects degradation (moisture, light, oxygen, temperature)
* Simple but reliable testing protocol (I don’t want overcomplicated lab-heavy approaches unless necessary)
**4. Packaging Recommendations**
* Cost-effective packaging that still protects quality (laminated pouches, bulk packs, etc.)
* When to use nitrogen flushing vs when it’s overkill
* Packaging differences for wholesale vs potential retail expansion
**5. Regulatory & Compliance (India)**
* FSSAI compliance basics for spice powders
* Labelling requirements
* Key quality/safety parameters (moisture limits, aflatoxin, microbial load)
