Canned African Sauce Formulation
Budget: $30 – $250 USD
I need to take a cherished African homemade sauce and convert it into a commercially viable, shelf-stable product packed in tin cans. My goal is a 24-month ambient life without resorting to synthetic preservatives. You will receive the full recipe, existing cooking steps, pH data, autoclave temperatures and any other parameters I currently track.
The job is to refine the formulation, set the precise thermal process and integrate high-pressure processing alongside other natural preservation techniques so the condiment remains safe, flavour-true and visually appealing. Tin cans are the primary package, though you may note any implications if an alternate format such as glass jars ever becomes desirable.
Deliverables
• Optimised formula plus detailed process flow diagram for tin-canning
I’m looking for practical, grounded recommendations backed by experience in retorted sauces or similar products, and clear documentation I can take straight to a processor.
