Potato Chip Factory Setup Guidance

I am setting up a full-scale potato-chip facility and need an experienced food-processing specialist to steer the technical side, with a strong focus on recipe development and flavour optimisation. I already have the basic plant layout and a tentative equipment list, but I want to start production only once the chip tastes, texture and shelf-life meet international standards.

Your main mission will be to transform raw potatoes into a consistently crunchy, evenly seasoned product that can hold its own against leading brands. This covers selecting the right potato varieties, fine-tuning the blanching, frying and de-oil parameters, balancing seasoning adhesion and yield, and adapting each step to the throughput of our continuous fryer line. I am open to classic salted, spicy or gourmet profiles later, yet the immediate priority is building a rock-solid base recipe that scales.

Deliverables
• A detailed process flow chart with critical control points
• Precise formulae for base seasoning and at least one market-ready flavour, including ingredient specs and supplier references
• Pilot trial protocol and target analytical results (moisture, oil content, water activity) to confirm shelf stability
• Recommendations for any auxiliary machinery or inline flavouring systems that will improve consistency or reduce waste

We will begin with bench-scale trials, move to a 50 kg/h pilot, and finally validate on our production line. I will handle all local sourcing; you provide the technical playbook, remote guidance during trials (video call is fine), and a concise corrective action report after each run.
