Prestashop admin order product add <SELECT>

I need an update for an existing module that was done for previous version of Prestashop.
Now I've Prestashop 1.7.8.9, in backorder order view (index.php/sell/orders/1/view) I need a <SELECT></SELECT> on each product in order. Old module available for update if needed. A few requirements:
- The prestashop core files must not be changed (only decoration, override, hook, reroute.... allowed) for allowing future upgrades of Prestashop core.
- I cannot run composer on hosting server
- the module must comply to prestashop standard (no files in override path but only on module's path)
