Modification of One Page Checkout PS module on Prestashop 1.6.1.24

In practice, the modifications consists in viewing all couriers available on the cart page of our site. In the list of couriers, however, only one must be selectable and others must be shown but not selectable.
The change should only apply to certain products.
Example:
Product n° 1 is delivered by courier number 5. (set in product modification)
Product n° 2 and n° 3 are delivered by all couriers. (set in product modification)
When products n° 1, n° 2 and n° 3 are added to the cart, all the couriers available on website must be displayed, but the user must only be able to select courier number n° 5 because product n°1 is delivered only by courier number 5
